SQUASH FLORENTINE 
1 (10 oz.) pkg. frozen chopped spinach
1 (16 oz.) pkg. cream cheese
1 lg. yellow onion, chopped
1 c. chopped bacon
8 sm. yellow squash

Saute bacon and onions in pan until onions are soft. Add spinach and cream cheese until cream cheese is melted. Cut ends from squash and cut squash in half. Remove seeds from squash with a spoon. Replace seeds with spinach stuffing.
