PINEAPPLE TART 
1 lb. short crust pastry
1 1/2 lbs. pineapple jam
2 egg whites

1. Divide dough into small rounded balls.

2. Flatten thinly into rounds using a rolling pin.

3. Place pineapple jam in the center and spread. (Amounts of jam can be varied according to your taste).

4. Fold into a triangular shape and prick edges with a fork to secure.

5. Brush tops with lightly beaten egg whites.

6. Put on greased baking sheet and bake at 300 degrees for 1 hour or until slightly brown.
