CREAMY POTATO SALAD 
6 med. potatoes
1 med. green pepper, chopped
1/3 c. chopped onion
1 1/4 c. mayonnaise
1 tbsp. vinegar
2 tsp. prepared mustard
1 tsp. salt
1/2 tsp. pepper
5 hard cooked eggs, chopped

In a covered saucepan cook potatoes in boiling water for 20 to 25 minutes or until just tender; drain well. Peel and cube potatoes. In a very large bowl combine green pepper, onion, mayonnaise, vinegar, mustard, salt and pepper. Add potatoes and eggs. Toss lightly to mix. Cover and chill for 6 to 24 hours. Serves 12.
