LOBSTER
 
Tenderloin of beef
Lobster tails

Steam lobster tail. Make lengthwise cut in the tenderloin, approximately 1/3 through. Lay open beef in butterfly fashion. Cut tails in half, lengthwise. Lay tails, end to end in cavity formed in the beef. Fold closed, bind with butcher string.

Place on metal sheet in a 500 degree (preheated) oven. If using meat thermometer, cook until internal temperature is 120 degrees. (Alternate method, place meat in 500 degree oven. Turn off heat, leave for 50 minutes.) Serves 10 to 12.
