HOT MILK CAKE | |
4 eggs 2 c. sugar 2 c. all purpose flour 2 tsp. baking powder 1/4 tsp. salt 2 tsp. vanilla 1 c. milk 1/2 c. butter (1 stick) TOPPING: 1/4 c. butter (1/2 stick) 1 c. brown sugar 1 c. chopped pecans 1/2 c. coconut 3 tbsp. milk With mixer at high speed, beat eggs until foamy. Add sugar; beat until creamy. Add flour, baking powder and salt; continue beating at low speed until well mixed. Add vanilla. Combine milk and butter in small saucepan; bring to a boil. Add to batter; mix well. Bake in a greased 9 x 13 inch cake pan at 350 degrees for 35 minutes or until cake pulls away from pan sides. While still hot, spread with topping mixture. Place immediately under broil, just until topping is browned. TOPPING: Combine topping ingredients in a saucepan. Stir over low heat to spreading consistency, adding additional milk if necessary to allow easy spreading over hot cake. |
