VEGETARIAN CHILI 
1 tbsp. olive oil
1 clove garlic, minced
1 sm. onion, minced
1 sm. sweet red pepper, diced
1 sm. zucchini, diced
1 tbsp. chili powder
1/4 tsp. ground cumin
1/2 tsp. dried oregano
1/8 tsp. cayenne pepper
2 can crushed tomatoes
2 cans drained corn plus 2 cans chili beans
1/2 c. salsa (med. to hot whatever your taste is)
Salt, pepper to taste
Cooked rice (optional)

Heat oil in large skillet. Add garlic, onion, pepper. Cook 1 minute.

Stir in tomatoes, corn, chili beans, salsa, simmer 30 minutes uncovered.

Serve plain or over rice.

Serves 4.
