QUICHE LORRAINE 
Pastry shell for 9 inch pan
12 slices (1/2 lb.) bacon, crisply fried & crumbled
1 c. shredded Swiss cheese (about 4 ounces)
1/3 c. minced onion, saute
3 eggs
1/2 tsp. salt
1 1/2 c. milk
1/4 tsp. sugar
Pinch of cayenne pepper (optional)

Heat oven to 425 degrees. Prepare pastry. Sprinkle bacon, cheese and onion in pastry lined pan. Beat eggs slightly and blend in remaining ingredients. Pour into pie pan. Bake 15 minutes then reduce oven temperature to 300 degrees and bake 30 minutes longer or until a knife inserted 1 inch from edge comes out clean. Let pie stand 10 minutes before cutting.
