CURRIED CARROT AND LEEK SOUP 
4 leeks, chopped
1/2 c. butter
1 tsp. ground cumin
5 c. chicken stock
1/4 c. orange juice concentrate
2 c. whipping cream
2 lbs. carrots, chopped (about 14 med.)
4 tsp. curry powder
1/2 tsp. nutmeg

Cook carrots and leeks in butter 15 minutes. Stir in rest of ingredients and simmer 20 minutes.
