HOMEMADE NOODLES 
2 to 2 1/2 c. flour (all-purpose)
1/2 tsp. salt
3 eggs
1 tbsp. cold water

Place 2 cups flour and salt in mixing bowl. Make a hole in center; add slightly beaten eggs and water. Mix until well blended.

Gather into a ball and knead on floured board until smooth, about 10 minutes. Add flour to keep dough from sticking. Divide dough into fourths and roll each piece paper thin. Cut into noodles. Dry and store in refrigerator or freezer until ready to cook in broth. Dry cut noodles on towel, then store.
