VEGGIE MELT 
1 zucchini, sliced thinly lengthwise
1 green pepper, sliced
1 onion, sliced
Fresh mushrooms (as desired), sliced
1 tomato, sliced
Rye bread
Swiss cheese

Stir fry or microwave the veggies until tender-crisp. Layer the veggies on dark bread with Swiss cheese over the veggies. Top with the other slice of bread and grill lightly until cheese melts. Delicious with other veggies also - sliced carrots, broccoli, or cauliflower.

Since microwave ovens vary in power, you may need to adjust your cooking time.
