FRUIT PIES 
5 c. sliced fresh peaches (8 med. size)
3/4 c. sugar
2 tbsp. tapioca
1 tbsp. lemon juice
1/8 tsp. cinnamon
Few grains salt
2 tbsp. butter, cut in pieces
1 tsp. sugar
Pastry for 2 crust 9" pie

Mix first 7 ingredients; line 9" pie pan with pastry. Pour in mixture. Cover with top crust. Seal, flute, pinch with fork. (Brush with cold water. Sprinkle with teaspoon of sugar, optional.) Bake on lowest rack in oven at 425 degrees for 15 minutes. Then 40 minutes at 350 degrees.
