DELUXE CREAMED PEAS 
3 tbsp. butter
1 (10 oz.) pkg. frozen pearl onions, thawed
1 med. red onion, chopped
2 tbsp. all-purpose flour
1 1/2 c. half & half
2 (10 oz.) pkg. frozen peas, thawed
1/8 tsp. ground nutmeg

In 3-quart saucepan, over medium-high heat, melt butter. Add pearl and red onions and dash of pepper; saute 5 minutes, or until tender. Stir in flour until blended; gradually add half & half, stirring until smooth. Bring to boiling, stirring; cook 1 minute. Add peas, 3/4 teaspoon salt and 1/8 teaspoon pepper and nutmeg. Cook until heated through. Makes 8 servings.
