DELICIOUS RAISIN PIE WITH ORANGE
RIND
 
1 1/2 c. raisins
1 1/2 c. water
1 tsp. flour
1/2 c. sugar
1 tsp. lemon juice
Rind of 1 orange, grated
Pie crust for double crust pie

Cook raisins in 1 1/2 cups water until tender (mix flour and sugar together stirring with fork for 1 minute). Add the sugar and flour mixture slowly into raisins and cook until thickened. Add the lemon juice and orange rind and mix well. Pour into unbaked pie shell and top with another crust or criss cross pie crust strips. Bake at 425 degrees for 10 minutes. Reduce heat to 325 degrees and bake approximately 20 minutes longer or until golden brown.
