CHEESY CHICKEN CASSEROLE | |
1 onion, chopped 1 tbsp. cooking oil 3 c. water or chicken broth 1 c. uncooked rice 1 1/2 c. cut up cooked chicken or turkey 1 c. cut up cheese Cook onion in oil until tender and lightly browned. Add water or chicken broth. Heat to boiling. Stir in rice. Reduce heat. Cover and cook 20 minutes. Add chicken or turkey and cheese. Cook over very low heat until meat is heated and cheese is melted or bake at 350 degrees for 30 minutes. Makes six 1 cup servings. |
