SHRIMP SALAD 
2 c. cooked, shelled and deveined shrimp, chilled
1 1/2 c. sliced celery
1/2 c. cauliflower
Chopped walnuts (optional)
1/4 c. sliced stuffed olives
1/4 c. mayonnaise
1 tsp. minced onion
Lettuce leaves

Into large bowl, cut shrimp in half lengthwise. Add all ingredients, except lettuce leaves; toss to mix well. Cover with plastic wrap and refrigerate. Serve on lettuce leaves.
