SALMON CRUNCHIES | |
1 egg 1 (15 oz.) can salmon, reserve liquid 1/2 c. flour 1 heaping tsp. baking powder Oil Add egg to drained salmon or tuna. Mix well. Add flour and mix thoroughly. Add baking powder to 1/4 cup of reserved liquid. This should foam up to 3/4 cup mark. Add to salmon and mix. Fry in hot oil by teaspoonfuls. Very light and crunchy. Serve with red cocktail sauce. May be served as a main dish or as an appetizer. |
