STUFFED ZUCCHINI 
1/2 c. grated cheddar cheese
1 tbsp. vegetable oil
1 tsp. thyme
1 tsp. sweet savory
3 eggs
1 tsp. sweet basil
1/3 c. whole wheat bread crumbs
Chopped parsley
2 lg. zucchini, steamed whole & seeds removed

When the zucchini are cold, cut lengthwise and remove seeds; also scoop out some of the pulp and add to the filling. Mix pulp with bread crumbs, add seasonings. Keep out some chopped parsley for garnishing. Add beaten eggs and cheese, mix well and spoon into zucchini which were placed in an oiled baking dish before the stuffing was added. Put about a tablespoon of water in the bottom of baking dish and bake at 350 degrees until browned and set, about 25 minutes or so. Garnish with chopped parsley and serve.
