STUFFED ZUCCHINI 
4 lg. zucchini
3/4 lb. ground beef
1/4 c. chopped onion
1/2 c. bread crumbs
1 egg, beaten
8 oz. can tomato sauce
1 tbsp. vegetable oil
1/3 c. Parmesan
1/4 tsp. oregano
1 clove garlic, minced
1/4 tsp. basil
Salt and pepper

Cut one thin lengthwise slice from each zucchini. Cut small slice off each end. Scoop contents out of zucchini shells and set aside. Saute beef and onion in oil; mix 1/4 cup of tomato sauce with egg and bread crumbs and add to meat and onion. Blend well. Fill shells with meat mixture and place in greased baking dish.

To remaining tomato sauce, add oregano, minced garlic, basil, salt and pepper and scooped out section of zucchini. Pour over filled shells and sprinkle with Parmesan cheese. Cover and bake at 350 degrees for 30 minutes. Remove cover last 10 minutes.
