RUBY RED RHUBARB CAKE | |
1/2 c. butter 1/2 c. sugar 1 egg 1/2 tsp. salt 1 tsp. vanilla 2 c. regular flour 1 tsp. baking soda 1 c. milk Cream butter and sugar. Add egg and vanilla; beat until smooth. Add dry ingredients alternately with milk. Mix well. Wash and chop 1 1/2 cups rhubarb. Add to batter. Place in greased 13"x9" cake pan. Mix 1/2 cup sugar, 1 teaspoon cinnamon and 1/2 cup finely chopped walnuts. Sprinkle over cake mixture. Bake at 350 degrees for 45 minutes. If desired spread powdered sugar frosting over top while still hot. |
