VEAL SCALLOPINI 
3 lbs. veal cubes
12 oz. can tomato sauce
1 lb. mushrooms
3 green peppers
3 tbsp. oil
3/4 tbsp. garlic powder
1 tbsp. rosemary
Salt & pepper to taste
Parsley
Garlic salt

Preheat oven to 375 degrees.

In large roasting pan, place veal, oil, garlic powder, rosemary, salt and pepper to taste. Place lid on top and bake for about 1 hour, stirring occasionally and adding a little water if needed. Then add tomato sauce and continue cooking.

Meanwhile, wash, slice and saute mushrooms with butter, oil, garlic salt, pepper and parsley. Cook for about 20 minutes.

Slice green peppers and cook with veal for another 1/2 hour to 45 minutes. Throw in the mushrooms and mix everything together and continue to cook until the veal is tender, approximately 30 to 45 minutes. To make meat more tender, cook on additional 15 minutes.
