TAMALE PIE 
1 med. onion, chopped
1 clove garlic, minced
2 tbsp. bacon fat
2 c. crumbled cold meat loaf
1 (8 oz.) can tomato sauce
1 tsp. chili powder
1/2 tsp. salt
Pepper to taste
1 (12 oz.) can whole corn
6 green olives, sliced
4 c. boiling water
1/2 tsp. salt
1 c. cornmeal
3 tbsp. grated cheddar cheese
1/4 c. butter

Fry onions and garlic in bacon grease until golden. Add meat loaf, tomato sauce, chili powder, salt, pepper, corn and olives and simmer over low heat. In another pot, cook cornmeal in boiling salted water for 5 minutes, stirring constantly. Line bottom and sides of dish with mush, saving enough to cover top. Pour in meat mixture and cover with remaining mush. Sprinkle with cheese, dot with 1/4 cup butter. Bake at 350 degrees until nicely brown on top, about 30 minutes.
