CHICKEN BALLS 
1 chicken breast, uncooked
1 slice ham
Ginger
Batter for coating

Remove chicken from bone in as big pieces as practical. Cut into about 1-inch square pieces, put between sheets of wax paper and with the side of a meat hammer, flatten each piece of chicken. Cut the slice of ham into small squares, cut ginger into little bits.

On each flattened piece of chicken, place one piece of ham and one piece of ginger and roll the chicken around it, forming a ball. Dip each ball into flour, then into batter and deep fry until golden brown.

Options for filling would be almonds, pineapple bits, green pepper, etc.
