EGG NOODLES 
Beat eggs until just mixed and add salt. Add enough flour to stir well then turn onto bread board and knead in all the flour needed to make a very stiff dough. Roll out very thin on board and let dry. Cut into width you like.

I like to cook noodles very slowly about 1 hour in oven or on top of stove in chicken or beef stock. They are good put in with chicken or beef about 1 hour before it's done. 2 eggs make a nice dish. If cooking on top of stove watch that they do not absorb too much liquid and stick to pan and scorch.
