COWBOY POTATOES 
6 lg. potatoes
2 med. onions, chopped
Salt and pepper to taste
4 tbsp. bacon drippings
Grated Parmesan cheese and chili powder

Peel potatoes and split in half lengthwise. Cut into thin half rounds. Melt drippings in heavy skillet with a cover. Add potatoes and chopped onion; season with salt and pepper. Cover and cook 10 minutes.

Turn potatoes with spatula; cook an additional 10 minutes. Should be tender but not completely browned. Uncover and brown potatoes on each side. Sprinkle with Parmesan cheese and serve hot. May use a small amount of chili powder if desired. Serves 6-8 persons.
