ROAST SUCKLING WITH APPLE
DRESSING
 
1 (20 lb.) suckling cleaned with head on

Roast in oven at 350 degrees F. for 6 hours. Be sure to preheat oven. Line oven with foil to prevent grease and dripping. On rotisserie, set turning time to slow and check often in last 2 hours for doneness.

In last 30 minutes, make a glaze with honey or plum jam and add a touch of salt and pepper.

Serve with your favorite dressing. Decorate with apple in mouth. Around sides of platter decorate with fresh fruit or acorn squash.

Gravy should be light in flavor with a "porky" flavor. Excess oil can be frozen.
