PUMPKIN OR SWEET POTATO PIE | |
1 1/2 c. pumpkin or sweet potatoes, canned or mashed 3/4 c. sugar 1/2 tsp. ginger 1 tsp. nutmeg 1 tsp. cinnamon 3 slightly beaten eggs 1 1/4 c. milk 1 (6 oz.) can evaporated milk One 9 inch pie crust or bake in an oblong baking pan without the crust. Thoroughly combine the pumpkin, sugar and the spices. Blend in eggs, milk and evaporated milk. Pour into unbaked pie shell, have edges crimped high. Bake at 400 degrees 50 minutes or until knife inserted in middle of pie comes out clean. If you bake as casserole cover with marshmallows until golden tan about 5 minutes after the 50 minute baking time. I use 3 cups of sweet potatoes without crust - put marshmallows on top. |
