STIR FRY CHICKEN FILLETS WITH
APPLE
 
8 oz. chicken meat
1/2 c. carrot (shredded)
1/2 c. green pepper
2 med. size green apple (thickly shredded)
1 tsp. mashed garlic

SEASONING:

1/4 tsp. salt
1/2 tbsp. corn flour
1 tbsp. oil

SAUCE:

1 1/2 tbsp. tomato sauce
1/2 tbsp. sugar
1/4 tsp. salt
1/4 tsp. sesame oil
Pinch of pepper
3/4 tsp. corn flour
3 tbsp. water

Peel off skin and remove core of apples. Shred thickly. Soak in slightly salty water to avoid turning brown before cooking. Wipe dry when ready to cook.

Boil shredded carrot in hot water for about 8 minutes to make soft. Drain dry.

Wash chicken meat and wipe dry. Shred thickly. Marinate with seasoning for 15 minutes. Boil in hot oil or water until nearly cooked.

Saute shredded ginger in 2 tablespoons oil. Add in green pepper. Stir fry until nearly cooked. Add in mashed garlic and stir for a while. Add in chicken apples and carrot. Mix well. Add in sauce and stir in a minute. Dish up and serve.
