FRESH APPLE CAKE 
1 1/2 c. cooking oil
2 c. sugar
3 eggs
3 c. flour plain
3 c. apples, peeled
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 c. chopped nuts

Mix oil, sugar then eggs; mix well. Add flour, salt and soda. Add vanilla; fold in nuts and apples. Pour into three 9 inch round pans. Bake at 350 degrees until toothpick comes out clean.

CARAMEL ICING FOR FRESH APPLE CAKE:

1 stick butter
1/4 c. canned cream
1 c. brown sugar

Combine all ingredients. Cook over low heat until boils. Remove from heat; let cool. Spread on cooled cake.
