SWEDISH FRUIT COMPOTE 
1 c. sugar
1/4 c. quick cooking tapioca
6 c. water
2 c. pitted dried prunes
1 c. dried apricots
1 c. raisins
1 cinnamon stick, 3 to 4 inches long
1/4 tsp. salt

Combine in saucepan and bring to a boil, stirring until sugar is dissolved. Lower heat, cover and simmer gently until the dried fruits are tender BUT not cooked apart (about 20 minutes). Cool. Store covered. Shortly before serving, add:

3 med. tart apples, sliced with or without peel
2 to 3 oranges, sliced with peel or membrane

Half slices look the best.

Offer cream in a pitcher to pour, if desired. Makes about 12 servings.
