SWEET AND SOUR SMOKED SAUSAGE 
1 green pepper
3 tomatoes
1 onion
1 lb. smoked sausage

Cut into 1/4 inch pieces and saute the above ingredients for 5 minutes. Combine: 1/2 tsp. ground ginger 1/2 c. apricot preserves 1/2 tsp. soy sauce 1 tsp. vinegar

Stir into sausage mixture. Heat to thicken. Add 2 cups drained pineapple chunks. Heat and serve over rice. Serves 4-6.
