SWEET PUNGENT SHRIMP | |
1 can pineapple chunks 1/2 c. brown sugar 2 tbsp. cornstarch 1/2 tsp. salt 1 tbsp. soy sauce 1/4 c. vinegar 2 sm. onions, sliced 1 med. pepper, cut in strips 1 lb. shrimp, cleaned and cooked Drain pineapple, reserving juice. Combine brown sugar, cornstarch, salt, soy sauce, vinegar and pineapple, cook over low heat, stirring constantly. Should take 10 minutes to thicken; add pineapple, onions and pepper, cook for 3 minutes. Remove from heat, add shrimp and let stand for 10 minutes to develop the flavor. Reheat just before serving with freshly steamed rice. |
