SQUASH CASSEROLE 
2 lbs. yellow squash
1/2 c. chopped onion
1/2 c. chopped bacon (cooked)
1 c. grated cheese
1 tsp. salt
1/2 tsp. pepper
3/4 c. bread crumbs

Clean and slice squash. Cook in enough water to cover for 15 minutes. Fry bacon - saute onion in bacon grease. Drain grease. Drain and mash squash. Combine with onion, bacon and cheese, salt and pepper to taste. Cover with bread crumbs. Bake in 350 degree oven for 1/2 hour before serving. Serves 8.
