POPPY SEED COOKIES 
1 c. butter
1/2 c. sugar
1/4 tsp. salt
2 egg yolks
2 c. sifted flour
3 tbsp. poppy seeds
Semi sweet chocolate bits
1 tsp. vanilla or almond extract

Cream butter, sugar and salt until light and fluffy. Add vanilla or almond extract and egg yolks one at a time and mix well. Stir in flour and mix well. Add poppy seeds. Shape into small balls. Place on lightly greased cookie sheets about 1 inch apart. Press in center of each cookie with thumb. Bake at 375 degrees for 10 to 12 minutes.

Remove from cookie sheets and cool. Press in center again when cool. Fill centers with melted semi sweet chocolate bits or your favorite lemon filling.
