CHICKEN OR PORK SATAYS 
2 lb. boneless pork loin or chicken, cubed

Whisk together until smooth:

3 tbsp. smooth peanut butter
Juice of 1 1/2 lemons
1 clove garlic, crushed
1 tbsp. ground coriander

Slowly add:

1/2 c. soy sauce

Gradually beat in:

1/4 c. dark sesame oil
1/4 c. dark brown sugar
Fresh ground pepper to taste

Add the meat to the marinade. The longer it marinades the better it tastes (can be up to 2 days). Put on skewers and broil (preferably on the grill).
