SPANISH CHICKEN 
1 frying chicken, cut into pieces
1/2 c. oil
1/2 c. chopped onion
1/2 c. uncooked rice
1/4 c. chopped green onion
1 clove garlic, minced
1/2 c. water
1 can whole tomatoes, drained
1 tsp. salt
1 tsp. chili powder
1/4 tsp. basil (sweet)
1/4 tsp. oregano

Brown chicken in oil. Remove from the pan and fry onion and green pepper until brown. Remove these and fry the rice until golden brown, stirring frequently. Add onion, green pepper, garlic, whole tomatoes, water, salt and seasonings; bring to a boil. Add browned chicken; cover tightly and simmer for 30 minutes or until tender.
