CRANBERRY NUT BREAD 
2 cups all-purpose flour
1 cup plus 1 tbsp. sugar
1 3/4 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 egg, well beaten
1/3 cup orange juice
1/4 cup water
2 tbsp. butter, melted and cooled
3/4 cup coarsely chopped walnuts
2 cups fresh cranberries, washed and cut in half
1 tsp. grated orange rind

Sift together flour, sugar, baking powder, baking soda and salt in a large bowl; set aside.

Combine egg, orange juice and water; stir in melted butter. Make a well in the center of dry ingredients. Add the liquid ingredients all at one time. Stir only enough to moisten. Add nuts, cranberries and grated orange rind. Stir just enough to blend.

Pour into greased and floured loaf pan. Bake at 350°F for about 70 minutes or until cake tester comes out clean. Cool thoroughly.
