SPINACH AND PEPPERONI LOAF 
8 oz. frozen spinach
8 oz. Mozzarella cheese, shredded
8 oz. pepperoni, ground
3 tbsp. olive oil
2 cloves garlic, chopped
1 loaf lg. Italian bread, or 2 sm. ones cut down the middle, not through

Cook spinach until dry. Add oil and garlic. Add cheese and pepperoni. Cook for 30 seconds more. Remove from heat. Spread mixture on the bread. Bake in oven for 20 minutes at 350 degrees, or until cheese is melted. Cut into slices. Serve at once.

You can put loaves together and freeze for use at later date. If frozen, take out of freezer 2 hours before baking and add 10 minutes to baking time.
