SPINACH SALAD 
1 bunch fresh spinach, thoroughly washed, stems removed and patted dry
1 med. purple onion, sliced and separated into rings
3 hard-cooked eggs, sliced
1/2 lb. bacon, fried crisp and crumbled
Croutons

DRESSING:

1/2 c. vinegar
1/2 c. oil and some bacon grease
1 c. sugar
Salt and pepper to taste

Tear up spinach in bowl. Add rest of ingredients except croutons. Mix dressing, pour over salad. Toss with croutons and serve.
