ZUCCHINI CASSEROLE 
1 bx. Stove Top dressing
5 c. zucchini, chopped
1 c. carrots, shredded
1/2 c. onion, chopped
1 can Cream of Chicken soup
1 c. sour cream
1 c. mild cheddar cheese, or yellow cheese of your choice

Prepare stove top dressing per instructions on package and pour 1/2 of it in bottom of large greased casserole. Cook zucchini, carrots and onion until tender. Drain and spread over stove top dressing in casserole. Mix cream of chicken soup, sour cream and cheese and pour over vegetables. Top with remaining stovetop dressing. Bake in moderate oven until bubbling and lightly browned.
