ONION AND GARLIC BREAD | |
1 tbsp. butter 1 medium yellow onion, chopped 3 cloves garlic, crushed 1 tsp. sugar 1/2 tsp. ground thyme or poultry seasoning A few grinds of black pepper 1 loaf (12 inch) crusty bread, split lengthwise 2 handfuls grated Parmesan cheese Melt butter in a small pan over moderate heat. Add onion, garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent. Place the split bread on a baking sheet and broil until golden. Spread half the onion and garlic in a thin layer on each half of bread. Sprinkle each half with a handful of cheese and return to broiler for 30 seconds, or until the cheese bubbles. Makes 4 servings. |
