CREAMY RICE PUDDING 
3/4 c. rice
Pinch of salt
1 qt. milk
1/2 c. sugar or to taste
1 lump butter
2 slightly beaten eggs
1 tsp. vanilla

Wash rice, then leave enough water to cover; cook over double boiler until rice begins to swell about 10 minutes. Then add about 1 quart milk (one cup at a time). Add about 1/2 cup sugar, butter and eggs. Stir well. Cook about 45 minutes or until rice is tender. Pour into bowl and stir in vanilla. Pudding will thicken as it sets.
