STUFFED PEPPERS 
1 to 1 1/2 lb. ground beef
1 pkg. taco seasoning
1/2 c. ricotta cheese
4 oz. Cheddar cheese, shredded
3 oz. Mozzarella cheese, shredded
3 med. tomatoes, diced
Hot pepper rings

Brown ground beef and drain fat. Add taco seasoning, simmer until well blended. Mix together in a medium bowl, ground beef, ricotta cheese, Mozzarella and 1/2 of Cheddar cheese and 1/2 tomatoes. Stuff peppers with mixture after cleaning. Cut peppers lengthwise and place in greased baking dish. Preheat oven to 350 degrees. Garnish tops with the other 1/2 of Cheddar cheese, tomatoes and a few hot pepper rings per pepper. Bake for 20 minutes. Serve right away.
