GAPACHO (Spanish Cold Soup) 
3/4 c. olive oil
1 lg. cucumber
3 lg. red tomatoes
1 loaf day old French type bread soaked in water
1/2 c. vinegar
1 lg. green pepper
1 to 3 cloves garlic

Pour olive oil and vinegar into large bowl. Put cucumber, garlic, tomatoes and pepper through grinder, each with a little water. Empty all into bowl, squeeze hunks of bread and put through grinder then add to bowl. Add 5 cups water including your bread water, salt to taste and put into the refrigerator.

Small bowls of chopped cucumber, tomatoes and pepper may be put on table if you wish, also bread, this can be added to bowls of soup if you like.

Serves about 12. If a blender is available, it is better to use than to grind things up.
