SWEDISH FRUKTPUDDING 
1 c. sifted flour
1 tsp. baking soda
1/4 tsp. salt
1 egg
2/3 c. granulated sugar
1 tsp. vanilla
1 can (1 lb.) fruit cocktail
1/2 c. firmly packed light brown sugar
1/2 tsp. cinnamon
1/2 c. coarsely chopped pecans or walnuts

Sift together the flour, baking soda and salt. In a 2-quart casserole, thoroughly beat together the egg and granulated sugar; stir in vanilla and fruit cocktail, including the syrup in the can. Stir in the sifted dry ingredients. Mix together the brown sugar, cinnamon, and nuts; sprinkle over top of pudding. Bake in a moderate (350 degree) oven, 40 to 45 minutes. Serve warm (or reheat) with whipped cream, sour cream, or whipped cream cheese. Makes 6 servings. (Bake in casserole in which it was mixed.)
