CHICKEN ZUCCHINI 
2 chicken breasts
2 zucchini
1 large white onion
1 (4 oz.) can sliced mushrooms, drained
1 can or jar of prepared chicken gravy

Cut the chicken into 1/2-inch cubes while still raw. Chop or slice the onion to your preference. Brown both in an uncovered skillet with cooking oil.

While the chicken is browning, cut the zucchini into very thin slices. Add the zucchini and mushrooms to the skillet, and top with the jar of chicken gravy.

Cover the skillet, as this will help to tenderize the zucchini and other vegetables. Continue frying the mixture for another 20 minutes, and you'll have a good one-pot meal.
