RUM LOGS 
1 c. butter
2 tsp. rum extract
2 tsp. vanilla
3/4 c. sugar
1 egg
3 c. flour
1 tsp. nutmeg

Cream butter, sugar and extracts, add eggs. Add sifted flour and nutmeg. Shape dough on lightly floured board into logs 1/2 inch in diameter. Cut in 3 inch logs. Bake at 350 degrees for 10 to 12 minutes.

These cookies are a Christmas tradition at our house! I actually make the dough and form the logs individually by taking a one teaspoon portion of dough and rolling it in my hands to form the "log." Once I have a whole cookie sheet of logs formed, I then roll the logs into a sugar/red sugar sprinkle/green sugar sprinkle mixture and lightly tap down on the log to flatten the top. I then frost each log with a butter/powdered sugar/milk/rum extract frosting that makes these cookies delicious!
