GREEN RICE CASSEROLE 
3 c. cooked long grain rice
2 c. firmly packed, finely chopped fresh spinach or 1 (10 oz.) pkg. frozen spinach
3/4 c. finely chopped green onion with tops
1/2 c. minced parsley
1/2 c. slivered almonds
1/4 c. butter
2 tsp. lemon juice
1 tsp. salt
Dash garlic powder
1 egg
1 c. milk

Combine rice, spinach, onion, parsley, almonds, butter, lemon juice, salt and garlic powder in 2 quart casserole.

Beat egg with milk. Stir into rice mixture. Cover and refrigerate. When cool cook in microwave for 15 minutes. Let stand 10 minutes. Or, bake in 350 degree oven for 25-30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
