MOA HAWAIIAN CHICKEN 
3 lbs. chicken pieces
1 1/3 c. cornflake crumbs
1 c. shredded coconut
1 tsp. salt
1 egg, slightly beaten
1/2 tsp. curry powder
1/4 c. butter, melted
1/3 c. frozen orange juice concentrate, undiluted

Wash and towel dry chicken; sprinkle with salt. Combine egg with thawed juice; marinate chicken for at least 15 minutes. Combine crumbs, coconut, and curry powder. Preheat oven to 350 degrees. Drain chicken and coat with crumb mixture. Place coated chicken, skin side up, in a large baking pan; sprinkle with remaining crumbs and drizzle with melted butter. Cover pan with aluminum foil and bake for 30 minutes; uncover and bake for 30 to 35 minutes longer or until done.
