MOCK CHICKEN CORDON BLEU 
4 boneless chicken breasts
1 c. butter, melted
4 c. crushed cornflakes
4 (1 oz.) slices Swiss cheese
4 (1 oz.) slices of ham

First pound out your chicken. Then place a slice of ham and a slice of cheese (be sure the cheese goes on last). Roll up in jelly roll fashion; tuck the ends under. Dip in the melted butter and roll in the cornflake crumbs. Bake at 350 degrees for about 25-30 minutes or until chicken is done. Very easy, very good! Yield: 4 servings.

Very good. Added a mushroom soup sauce, served over brown rice with side veggie. Definitely worth trying.
