CHEESE BROCCOLI SOUP 
2 tbsp. butter
1 med. onion
3 c. water
3 chicken bouillon cubes
2 c. diced potatoes
3 c. milk
3/4 - 1 lb. Velveeta cheese
2 lg. bunches fresh broccoli, chopped
1 clove garlic

Saute onion in butter until onion is clear in large pot. Add water and bouillon cubes (3 cups of chicken stock may be used instead). Add garlic, milk, cheese, potatoes and broccoli. Simmer until vegetables are done. Salt and pepper to taste. May thicken with cornstarch if desired.
